I buy my ingredients locally from organic growers, and make my sausage fresh from pork loin. It’s clean, lean and high quality. You can really taste the difference. Using high quality ingredients with no additives, preservatives, etc. provides the fresh, wholesome flavor of “homemade” ravioli that Great Nonna Spallino made.
There are a variety of ravioli in the markets today. I will always provide the highest quality ravioli on the market. They may not be available in large bulk or in as many locations as the competition, but I’d rather maintain the quality as opposed to mass produced quantity.
